Will a 9mm x 19 Ruger pistol with FMJ bullets be fatal enough? Will shooting it in the mouth be instant death?

You can never be certain with single bullets. I'd expect FMJ to punch a hole straight through.
I doubt that death would be "instant", but it's very possible that you'd loose consciousness instantly or suffer too much head trauma to understand what's happening, and then die soon after.
Odds are that any gun shot to the head will be lethal, but I've heard too many stories about people surviving severe brain injuries to have faith in it, myself. Brain injury is just such a weird and diverse thing that I can't even comprehend what it might be like. That makes me fear it more than any other injury.
I'm pretty sure that there are statistics available if you dig a bit in the resource threads.

It's not about the size, but the aim 
Seriously though, brains are pretty squishy and any object with enough force ripping through them will do the job. Your main goal is aiming for your brain stem, as that controls your heart and diaphragm. The advantage of a larger caliber bullet is a wider area of damage so your aim doesn't have to be as good. Rule of thumb is usually .45 but plenty of people have succeeded with a 9mm.
If you are going with that small of a caliber though, I would recommend you try to get hollow-point rounds. They will do far more damage than an FMJ.
