Probably nothing other than feel a bit of nausea as once the nitrite has been oxidised (exposes to air) it loses its properties of which stop your blood carrying oxygen

Youll probably just get sick, same way as with drinking saltwater.

According to this article, about 5% of nitrate is converted to nitrite upon ingestion.
