What is better shotgun in the mouth or at the side if the head?

Mouth. Only a handgun would be suitable for side of the head.

The shotgun I have is fairly short so I could reach the trigger if I did side of the head.

Either can work. I guess it's whatever you feel most comfortable with.

Behind and slightly above the ear is considered to be the best shot placement for side of the head. But with a shotgun, so long as the gun/ammo is sound and you're aiming for the brain (never under the chin) then you should be fine. I would definitely practice with the gun unloaded, to make sure you know you can do it. I would say inside the mouth is a bit less risky, because if you flinch and your aim isn't perfect you'll still likely be okay. Side of the head could be less certain if the mouth of the barrel doesn't stay flush with the side of your head.

How do you practice with the gun unloaded?

You dry fire the gun in exactly the same manner that you will be doing it, when you do it for real. You can use a mirror to line it up and make sure your aim is perfect. But be very certain that there is no ammo in the gun when practicing. Also make sure your model of gun is okay to dry fire. Most modern ones are fine, it's just the older ones where you could damage the firing pin. But you don't even necessarily have to pull the trigger when practicing, you can just get your positioning correct and gain confidence that you can comfortably reach the trigger.

This is why I am considering side of the head.

That only happens if you put it under the chin pointing up. It's not a risk inside the mouth aimed towards the brainstem. In fact it's the safest method.
