there's no snow outside but it gets very cold and windy.

is there any way to prepare besides dressing warm (gloves, winter coat)? i'll be in the forest. i've been avoiding going outside at night because it's been really cold lately.

Layering will help if you plan to be outside for long. It's -15C (5F) where I live right now and usually in this weather I wear a tight long-sleeve shirt and fleece-lined leggings as a base layer, and then sweatpants and a thick sweater over top. That plus my coat/hat/gloves/scarf makes it so that sometimes I even get too warm, especially while walking.

I regretted not having gloves with me when I was in the woods at night. When time came to tie the rope to the tree, I couldn't feel my hands properly anymore

I regretted not having gloves
yeah, i'm thinking of buying a thicker pair of winter gloves. even if i'm outside for only 2 hours it's unbearable to have cold and numb hands.
