You'll bleed out. Highly unlikely you'll die, it'll be painful but its gonna be extremely slow.
The success rate for people who do that is very low.

On a serious note, I've read that cutting has been used by some suicidal MDs. Apparently it can actually work (even without head removal) if you were trained in where vital blood vessels happen to be. I don't know if being an amateur cutter makes one as qualified as a surgeon though.
