I'm a sucker for the piano in Classical music. I love pieces that sound like something dreadful is about to happen- like Rachmaninoff- Prelude in C Sharp Minor and disquieting pieces like Eric Satie- Gnossienne No.1.

In Rock/ Pop, I love string arrangements- like in Britney Spears- Toxic and U2- Hold me, Thrill me, Kiss me, Kill me.

For "traditional" western instruments I love a violin or clarinet. I am also a huge fan of rock/metal with orchestra. Pipe organ.

Other rarer instruments (for me) that I like: hand pan, sitar, shamisen, and any wooden flute.

Also bagpipes.

Back when I could hear well and listen to music... I especially loved bowed instruments like violins, violas, cello, etc and strummed instruments like classical guitars, lutes, mandolins, and ouds...

As a pianist myself I'm a sucker for piano. Also I love muted trumpet I think it's underutilized outside of jazz. IMO real instruments are underutilized like there's value in digital production for sure but real drums or real piano can always add so much to a track. Granted, it's difficult to get someone to come play and record an instrument instead of just using a DAW but I still think it can be worth it most of the time.
