Is polypropylene the most suitable material for suspended hanging?

Polyester is the best, as it's less stretchy and stronger than polypropylene. However, polypropylene still works fine.

I've read in posts that dock line is the best, about 1/2 inch thick (thumb thick).

What length would be best to get?
The length depends on your local circumstances. You have to be able to tie a noose, tie it to the anchor point and depending on whether you plan partial or full you need a certain length to hang freely that depends on your room/tree height especially if you plan full. You have to measure and calculate that on your own.
