I've already got a knot chosen for my noose (poacher's knot) but am looking as to suggestions for a knot to secure the noose to overhead beams. (The noose will hang from these beams using this knot.) Will a clove hitch be sufficient or do you guys recommend additional or different knots?

I will be using a double constrictor knot for the anchor.

Clove hitch will definitely not hold well. While some hitches are more secure, I would avoid using them in general because they rely on the shape of the anchor point. Fixed loop knots will work better, I would use a bowline (referred to as the king of knots) or a scott's locked bowline for extra security. I would trust this knot with my life and more. Poachers knot is a good choice for noose
