For thanksgiving I made Italian rainbow cookies!! They where surprisingly difficult to make but came out pretty good (for a beginner) :)

I went over to my son's house and took a chocolate cobbler and some vanilla ice cream for dessert. He did the rest of the cooking. He's a good fella!

Wow! They look delicious. Are the different layers different flavours? Is the green layer pistachio? They remind me of Neapolitan ice cream.

Thank you!! The layers are all the same (almond) besides me using dried raspberry dust to dye to pink layer!

Italian rainbow cookies origin comes from American-Italian bakeries that wanted to make a cookie that looked like the Italy flag so they didn't care about flavor profile as much as the looks of them! I used raspberry jam in between layers to make them stick though. :)
